Holiday Valley (Ellicotville, NY), Allegany State Forest, and Alleghaney State Park are good spots as well. They're about 2.5 hours west of here and there is a fair amount of biking to be had. Check out wnymba.org for trail maps. Ellicotville has some character to it as well - good brewpub and a nice atmosphere. Camping in one of the cabins at allegany is nice too.
If you're feeling really adventerous, head down to Ashville, NC. Bring your climbing legs! The drive down on the mt. parkway is pretty sweet too.

I don't know that you'd find something in Ithaca, specifically, that
would keep you busy for 5-7 days. The two biggest spots are Shindagin
Hollow and Hammond Hill, but they may only keep you busy for a day, at
most. There is certainly enough to keep you busy for several days
within an hour's drive of Ithaca, though, if you're able to do that.
There are spots in Binghamton, Newark Valley, Syracuse, and out toward
Rochester that are very popular. I've heard that there is a really
good section of the Finger Lakes Trail (about the only part of it open
to mountain biking) in Letchworth State Park, although I think that is
geared toward more advanced mtn bikers. I suggest you check out
http://www.cycle-cny.com and check through the forums for ideas.
There is also a section on the website that lists various areas with
trails in the area, gives some descriptions of them, and also ranks
them.
